30 Minute Vegetable Stir-Fry

One of my New Years resolutions was to take more time to relax and just enjoy moments of doing nothing. Well, I may have overdone that these past few days. I spent the first few days of 2021 on the couch, binge watching Netflix, all of the Harry Potter films, and eating the most amazing peanut brittle that was gifted to us by a friend! Honestly, I wanted to use a PTO day for today and continue the madness but it was back to work for me! So for dinner, I needed something easy, and most importantly, healthy.

As I mentioned, I have been absolutely lazy these past few days which meant, going to the grocery store sounded like a chore as well. This recipe was more of a fridge cleanup, perfect for meatless Monday, and best part, it’s done all in one pan. So easy clean up!

Ingredients

  • 1 Tbsp Olive Oil
  • 1 medium Onion, sliced
  • 1 C Broccoli, pieces
  • 1 Zucchini, cubed
  • 2 Carrots, cut into strips
  • 1 C Snow Peas
  • 6 Asparagus, end cut off and then cut into bite size
  • 1 Red Bell Pepper, sliced
  • 1 Package Thai Ribbon Stir-Fry Noodles (or your choice of noodles, cooked per package instructions)
  • Salt & Pepper, to taste

For the sauce:

  • 1/4 C Coconut Aminos (or soy sauce)
  • 2 Tbsp Hoisin Sauce
  • 1/2 Tbsp honey
  • 1/2 Tbsp Mirin
  • 1/3 C Vegetable broth
  • 1 tsp Garlic Chili Sauce (or red pepper flakes)
  • 1 Garlic Clove, minced

DIRECTIONS

  1. Mix all sauce ingredients in a small bowl and set aside until ready to use
  2. In a large pan, begin by heating up your olive oil over medium-high heat
  3. Add in your onions, sauté for 2 minutes. Salt & pepper to taste and continue to do this as you add remainder ingredients.
  4. Next, add in your broccoli, asparagus, and squash. Sauté for another 4-5 minutes
  5. Next, add in your carrots, bell pepper, snow peas. Sauté for another 4-5 minutes
  6. Finally, stir in your noodles with prepared sauce. Toss until warm throughout.

Notes:

As you can tell, I added certain vegetables at different times. My reason for this is because certain vegetables take longer to cook than others for my taste. This is just my preference. With that said, this recipe can be done with any of your favorite vegetables. If you would prefer to add additional vegetables or replace any, it can definitely be done!
