Black Eyed Peas & Ham

A traditional dish for my family is Tamales. Wrapped in banana leaves and filled with lots of mole sauce, it is absolutely delicious! But when the husband asked for black eyed peas for New Years luck, I went blank! Also, that did not sound good at all! Let’s just say, I am always up for a challenge and this one turned out yummy after all. I tend to change up my recipe every year but 2021 turned out perfect! Plus, if there is a year we need more luck, I would say 2021 needs to be that year! haha

Before we start, I want to say every year we get a bone-in ham from Honey Baked Ham for Thanksgiving. I will save the bone along with some ham and freeze it so I can use for New Years. I think that is what makes this recipe perfect! If able to, I recommend you do the same.

Soaking your black eyed peas

Flavor, flavor, flavor is my motto! I am also about quick and easy. Before starting this recipe, here is how I quick soak my black eyed peas.

Ingredients

  • 16 oz dry black eyed peas
  • 6 C water
  • 1 C chicken broth
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp crushed red peppers

Directions

  1. Add all ingredients in small pot and turn to medium-high heat.
  2. Boil for 2 minutes.
  3. Turn heat off, cover, and let soak for 1 hour.
  4. Drain and rinse. Now its ready to use!

BLACK EYED PEAS & HAM

Ingredients

  • 2 Tbsp Olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, mined
  • 1 C russet potatoes, diced
  • 1/2 C carrots, diced
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp smoked paprika
  • 1 tsp cayenne
  • 2 C cubed ham plus ham bone
  • 16 oz black eyed peas, soaked (see above)
  • 2 C water
  • 4 C chicken broth
  • 1 bay leaf
  • 1 sprig, fresh thyme
  • 1 Tbsp green onions

DIRECTIONS

  1. In a large pot, heat your olive oil over medium-high heat
  2. Add your diced onions and garlic and sauté for about 2-3 minutes
  3. Add in your potatoes, carrots, and seasonings and sauté for an additional 2-3 minutes.
  4. Stir in your cubed ham and black eyed peas.
  5. Add remainder ingredients and let simmer for 2-3 hours.
  6. Serve with warm cornbread and enjoy!
