I sincerely struggle when it comes to lunch items. I never eat leftovers (that's all my husband) because I hate eating the same thing every day.... I tend to get bored easily. I love smoothies and sandwiches but then again, same thing different day. I was desperate to try something new in my household. Luckily, [...]

Guac is not always extra 😉 I know it is taco Tuesday but enchiladas sounded good…. Or maybe I just need something comforting. I know this looks like the most basic dish EVER... but honestly, that's the point. The story and the simple meal is what makes this the best dish ever! When taco night should be every night and not only on Tuesdays... you make Homemade Flour Tortillas! Made with crispy fried chicken and coated in a sticky orange glaze, this taste just like the good stuff. Tomatillo Avocado Salsa - easy, delicious, and perfect to dip your chips in! You'll never go back to store bought again, promise 😉 I recently had happy hour with a friend and all we could talk about is needing to get away. Somewhere close enough to drive to and with good food. Immediately, we both thought of Louisiana! Beignets, crawfish étouffée, gumbo, and of course, Jambalaya! Lunch is served! 😋 I recently hosted a dinner and without knowing, one of my guests eats zero dairy, and I completely failed with the appetizer... Well, now I am on a mission to redeem myself and I think this Thai Coconut Sauce will definitely be it!
