Spring is finally here and so is the rain! Yesterday we had random pours with a sprinkle of tornado warnings. So let’s be honest, cozy comfort food is still very much a thing in my house at the moment. Which is why this pasta bowl is so much happiness right now. Rigatoni tossed with a sauce made with ground turkey, Italian sausage, and diced carrots and finished with whipped ricotta…. yessss! So much yes to this!
Greatest part is, this recipe is actually super easy to make and made with some great pantry items! Making it the great for a weekday meal.

Ingredients
- 1 Tbsp olive oil
- 1/4 C onion, diced
- 2 garlic clove, minced
- 3/4 lb ground chicken
- 1/2 lb ground Italian sausage
- 1/2 C carrots, diced
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp dried oregano
- 1 Tbsp parsley, chopped
- 1 25.5 oz can, Lucini Roasted Garlic Marinara
- 1/4 C reserved pasta water
- 1 box rigatoni, cooked per instructions
- 1 C whole milk ricotta cheese, whipped in food processor
- To Serve: Fresh parsley, cracked black pepper, and shaved parmesan
DIRECTIONS
- Bring a large pot of water to a boil. Sprinkle in some salt and add a drizzle of olive oil. Add the pasta and cook according to package directions. Reserve 1/4 C pasta water before draining.
- Heat olive oil in a large pan over medium high heat. Add in your onions and garlic and let sauté for a couple of minutes.
- Add in your ground chicken, Italian sausage, diced carrots, salt, pepper & parsley. Once cooked through, stir in marinara sauce.
- Toss in your pasta and reserved pasta water and fully coat in sauce.
- Serve with whipped ricotta, shaved parmesan, fresh parsley, and cracked pepper. All done and super easy!
