Garlic Parmesan Sweet Potato Fries with Chipotle Aioli

Mashed potatoes. Loaded baked potatoes. Potato salad. French Fries! Baked, fried, or mashed, just give me all the potatoes. These sweet potato fries tossed with delicious butter garlic sauce and parmesan, then topped with goat cheese, and served with creamy chipotle aioli…. I DO NOT need to say anymore! Sooooo good!

Ingredients

Sweet Potato Fries:

  • 4 Large Sweet Potatoes, cut into 1/4 inch wide strips
  • 3 Tbsp olive oil
  • 1 tsp smoked paprika
  • 1/8 tsp cayenne
  • salt & pepper to taste
  • 2 Tbsp butter
  • 2 garlic cloves, minced
  • 1/2 C grated parmesan cheese
  • 2 Tbsp goat cheese, for serving, optional
  • 1 Tbsp parsley, chopped, for serving, optional

Chipotle Aioli:

  • 1/2 avocado oil mayo
  • 1 inch chipotle peppers in adobo sauce
  • 1/4 tsp smoked paprika
  • salt & pepper to taste

DIRECTIONS

  1. Preheat the oven to 425 degrees and line 2 large baking sheet with parchment paper.
  2. Place the sliced potatoes into a large bowl and toss with olive oil, smoked paprika, cayenne, and pinch of salt and pepper.
  3. Spread the fries out between the 2 baking sheets in an even single layer. Do not overcrowd.
  4. Transfer to preheated oven and bake for 20 minutes, then flip. Return to the oven and bake for and additional 20 minutes. You want the sweet potatoes to be tender and crispy. **optional, turn your broiler on low and broil for 3-5 minutes for extra crisp. Keep a close eye to avoid burning**
  5. Melt the butter and garlic together in a small pan over medium heat. Remove the fries from the oven and gently toss with melted garlic butter and parmesan.
  6. Make your aioli by placing all aioli ingredients in a small food processor and pulse in 10 second intervals until well mixed and creamy.
  7. Serve fries by crumbling your goat cheese over the top of your fries, sprinkle some chopped parsley, and a side of chipotle aioli!

This Aioli also goes great with Air Fryer Crispy Chicken Wings!
